Recipe Roundup – Strawberries with Cream Cheese Filling   4 comments

Its Recipe Roundup Time and this month’s Roundup is Dessert!!  YUMMY!  I rounded up two recipes to share with you all:

Strawberries with Cream Cheese Filling

Filled Strawberries With Cream Cheese

These pretty strawberries are cut to resemble flower petals then stuffed with sweetened cream cheese.

  • 32 fresh whole strawberries, large
  • 11 to 12 ounces cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1/4 teaspoon almond extract
  • 2 tablespoons semisweet or milk chocolate, grated

Cut a thin slice from the stem end of each strawberry, allowing the berries to stand upright on flattened end. Place berries, cut side down, on a serving platter. Cut each berry carefully into 4 wedges, cutting almost to, but not through, bottoms. Fan wedges just slightly, taking care not to break; set berries aside. In a mixing bowl, beat together the cream cheese, confectioners’ sugar, and almond extract until light and fluffy. Gently fold in grated chocolate. Using a teaspoon or decorating bag with decorative tip, fill the strawberries. If desired, sprinkle with a little more grated chocolate. Cover and chill until ready to serve.  Makes about 32 filled strawberries.

  1. That apple nut cake is reminiscent of a fresh apple cake I make….but it’s just different enough I’ll have to try it! (and the lemon icing looks delicious!) And I must admit, I’ve never had stuffed strawberries (I know – where have I been?) – so I think I’m going to have to try those soon too! So much for the diet!

  2. The strawberries look great. The recipe from Vera is a scream. My computer isn’t enlarging it for me…but you know me and technology. No worries…squint, squint I think I can make it out….

  3. Wow! The strawberries are gorgeous!

Ellen, I put the recipes, pictures and all, into a word document for the blogger’s cookbook and you can read the recipe right off the card.

    No Kidding!

  4. I love strawberries, and this sounds yummy!
